Fresh ginger harvest is in progress this week.
There’s something special about ginger that has just come out of the ground. It’s incredibly aromatic, juicy, tender, and packed with the natural compounds that make ginger such an interesting food.
Fresh ginger is rich in gingerols, including 6-gingerol, along with antioxidants and vitamin C. Ginger has been studied for its ability to support digestion, ease nausea, and help the body manage inflammation.
There’s also growing interest in ginger and cancer research. Compounds such as 6-gingerol are being studied for their antioxidant and anti-inflammatory activity and for how they may influence cellular pathways involved in cancer development and growth.
