Come see us Saturday at Whole Foods 6621 W 119th St O.P. . They are having their yearly Local Vender Road Show. Jerry and I will be there from 12:00 to 4:00. Lots of samples and various activities.

Pasta and Spinach

1T olive oil
1 cup chopped onion
3 garlic cloves chopped
1 cup Jan's Pasta Sauce
1 1/2 cups chicken stock
1/2 t oregano
8 ounces thin spaghetti
1/2 t salt
10 ounces fresh spinach
1/4 cup shaved parmesan cheese

Heat oil in large sauce pan, add onion and garlic, sauté .Add Jan's pasta sauce, stock, oregano, and uncooked pasta, bring to a boil, reduce heat cover and cook until pasta is done (7 min). Uncover add spinach and salt stir until spinach is wilted. Serve hot with shaved parmesan on top.
Great side dish, light lunch, or add chicken for a main course.

If you missed my Chili on Saturday at Whole Foods here is the recipe: Meatless and Gluten Free Chili

clove garlic minced
white onion chopped
16 oz white mushrooms roughfully chopped
2 jars of Jan's Organic World HOT salsa
1 can black beans drained
1 can kidney beans drained
1/2 t cumin

sauté garlic,onion, and mushrooms until tender.
Add the remaining ingredients and simmer for 30 minutes.

ENJOY and try to stay warm
