DRESSING
- 1/4 cup extra-virgin olive oil (purchased at Uptown Olive Oil & More)�- 2 Tbsp. balsamic vinegar (purchased at Uptown Olive Oil & More)�- 1 Tbsp. blackberry jam�- 1 tsp. honey�- Kosher salt

Ingredients:
🥒 2 zucchinis (halved & scooped)
🍅 1 can diced tomatoes
🧄 1 clove garlic (minced)
🌿 Italian herbs (basil & oregano)
🥄 1 cup cooked quinoa

How To Make:
1️⃣ Sauté garlic with tomatoes and herbs.
2️⃣ Mix in cooked quinoa.
3️⃣ Stuff zucchini halves with mixture.
