Today is the day, y’all!!! A surprise debut of our fresh RABBIT PATTY SAUSAGE, fresh harvest Rabbits, the Last Market day at Town Creek Park… and a ChuckWagon slam full of goodies !!! We will be in Auburn till 11am, and the Bus will be open and full of all your favorites plus fresh rabbit meats 10-6 today🥳
So, this rabbit sausage… it is the best pan sausage you’ll put in your mouth, bar none! And before you think it, yeah, it’s a slightly fatty sausage, we raise them right on this hill!! I have personally replaced all pork sausage with rabbit in my home, and never looked back! We feel blessed to finally have some extra that we can share with you! Also, the whole fresh rabbits we have available this weekend are on the smaller side, fryer size they call them, so if you’re new to 🐇, today would be the day to venture out!!

How are yall dealing with the summer heat… we are rocking it over here!!! Molly loves her ice jug she gets to snuggle on these blazing days… and the ducks love their dinner being served in water (homegrown duckweed)! And the ChuckWagon is loaded up just for you with a ton of great grilling foods for the weekend and easy evening meals great for school nights! Summertime is almost past us, the rabbit meat and pet treats we sell is sustainably raised and very happy meat, and the duck eggs taste clean and carry very happy vibes!!! Duck meat coming soon🤫 Yall come see us, in Town Creek Park till 11, and at the bus from 10-6 today! ♥️🔥♥️

Apparently somewhere along the way America decided rabbit meat needed banjo music playing in the background. You know the stereotype. Hillbilly food. Poor people food. Something somebody’s grandpa ate because there wasn’t anything else around. Meanwhile, depending on where you’re buying it in the U.S., whole rabbit can run well into the double digits per pound and specialty cuts can push even higher. That’s a pretty expensive little hillbilly dinner.

The funny part is that our perception of rabbit is largely cultural. Rabbit has a LONG culinary history outside of the little American bubble where we’ve decided certain animals are food and certain animals are absolutely horrifying to put on a dinner plate. In Mexico, rabbit has been part of the diet since pre Hispanic times and is still found in traditional dishes. Across different cultures and cuisines, rabbit isn’t some bizarre survival food. It’s just meat. Good meat.

Here in the U.S., though, it’s become much more of a niche or specialty meat. You probably aren’t going to find a pile of rabbits next to the $6 rotisserie chickens, but that doesn’t mean you can’t buy one. Specialty meat markets, local producers and butcher shops are usually your better bet, and depending on the butcher, it may simply be something you have to request or order.

Publix even sold domestic rabbit meat and ended up at the center of a massive campaign demanding that they stop. That’s really where rabbit gets interesting to me. It isn’t that rabbit somehow stopped being livestock or stopped being food. We just developed a very strong cultural taboo around eating an animal that a lot of Americans also recognize as a pet.

So call it specialty meat, niche meat, gourmet meat, delicacy, whatever fits the market you’re looking at. Just maybe retire the idea that rabbit is some dirt cheap desperation meal being cooked over a barrel behind a single wide trailer. The banjo is optional. The rabbit is apparently bougie.

A little behind the scenes of the farm…
Black Soldier Fly Larvae!!
The chickens fertilize the plants.
The plants feed the rabbits.
The rabbits make the Larvae
The larvae feed the ducks.
The ducks pest control the orchard.
The orchard feeds everyone.
The Duck W**d feeds the minnows.
The minnows feed the ducks.
The duckweed feeds rabbits, chickens, ducks.
The minnows catch us fish.

We do not buy fertilizer.
We do not throw away food or compost.
We reduce, reuse, repurpose.
We take nothing for granted.
We Eat Happy Meat!!

We supplement with very little bagged feed for the amount of animals we raise. We are on well water here. I venture to say our meat and eggs may just be healthier and happier than any available anywhere else!! We are blessed to be able to serve the community through what God has provided on this great land!!
