The Cornucopia is a small family farm in rural Northwest Iowa pursuing organic methods in raising and marketing Certified Naturally Grown vegetables. Next week, all this bare soil will be covered in a flush of green, but not weeds!

We plant broccoli, cauliflower, and cabbage in biodegradable mulch. Then just before it rains, we fill the bare soil with cover crop seed!

1. No bare soil = no weeds
2. No weeds = no time spent weeding = happier crew
3. A thick stand of cover crops = no insect pests
4. No insect pests = no damage to vegetables = happier customers

Swiss Chard is always a welcome pop of color first thing in the spring with its soft, tender leaves, crisp stems, and bright colors. Baby Chard tastes fantastic in a salad while larger leaves are better suited for throwing in soup, stir fry, rice pilaf, or sautéed with other vegetables.

We love it in a quiche with bacon and zucchini (our featured recipe in this week’s CSA newsletter) or mixed in Sheet-Pan Bibimbap from the New York Times (it’s a great “clean out the fridge” recipe).

What a gorgeous week it’s been, and it’s another beautiful day for the Falls Park Farmer's Market and the Sioux City Farmers Market.

We’ve got so much joy this past week harvesting vegetables we don’t normally have until mid June thanks to our new greenhouse. Come early to find the first beets, celery, and a few other surprises at market today!

We rarely post on Sundays but I found myself out here “singing”, it’s my wife that sings but I know the lyrics.
Doing these chores is meditating time for me. Here’s what’s going through my head:
