New breeding stock. Three Berkshire gilts and three Berkshire GSO (Gloucester Old Spot) crosses. The Berkshire and GSO crosses are what we call Heritage Bacon pigs. Berkshire pork is prized around the world for its richness, succulent texture, marbling, and complexity of flavor. Berkshire pork is darker, with a more robust coloration and a dense networking of intramuscular marbling. The marbling is comparable to prime beef, with the meat holding a distinctive flavor and unparalleled tenderness when it comes to pork.

GSO or Gloucester Old Spots are known to produce flavorful, succulent pork with generous fat and marbling. This breed was the gourmets' pork of choice in England through the 1920s and 1930s, before industrialized agriculture and factory farming caused outdoor pigs to fall out of favor.

Our pigs are pasture raised and fruit finished. Follow our journey to bring farm fresh food to your door in Southwest Washington.
