Fresh on ice in Soldotna: Kachemak Bay oysters 🦪 slow-grown the Alaska way.

These aren’t the quick Pacific oysters you see down south. In the glacier-fed waters of Kachemak Bay, cold water keeps them from spawning, so they stay plump, firm, and sweet year-round. Most Pacifics hit market size in about 18 months. These take 3 to 4 years. That extra time builds a deeper cup, a harder shell, and a clean finish people describe as cucumber, snap pea, and a little honeydew. Born in big tidal exchanges, raised off the bottom, and on the ice in our case right now.

While you’re here, stock up on;

🦐Colossal Alaska spot prawns — wild, sweet, and lobster-firm. The big ones.
🐟🔥Alaska smoked king salmon bellies— brown-sugar brine, no added nitrates or preservatives, vacuum-packed for the road or the freezer.
🐟Halibut cheeks — the “filet mignon” of the fish. Pearly, tender, and ready for a quick sear.

Good luck tonight, Buccaneers and Cowboys. Good luck Sunday, Bears and Packers. However that one goes at Lambeau, the grill does not pick a side.
Wild ocean scallops. Candy-sweet. Wrapped in hardwood-smoked bacon 🥓 Four to a pack. No prep. Bake, air-fry, or send them straight over the flames. Bacon renders, scallop stays buttery, and the tray is gone before halftime.

Line them up for next week. Seahawks at Broncos on Thursday. Cowboys at Packers on Sunday night. Commanders at the 49ers on Monday.
