Reintroducing the actual definition of tempeh, back to the approved Codex Standard CXS 313R-2013 (then amended in 2015 & 2017) that BOStempeh checks off ✅✅✅✅

🔥Color: The product should show a white, luxurious, or abundant growth of Rhizopus mycelium (mold) covering the beans.
🔥Texture/Texture: The cake must be compact and firm, holding together well, and not easily breaking or disintegrating upon cutting with a knife.
🔥Aroma/Odour: The smell must be fresh, clean, and characteristic of fermented tempeh. There should be no aroma of ammonia or other foul smells.
🔥Flavor/Taste: The taste is described as nutty, meaty, and mushroom-like, indicating proper fermentation.

🌱Ingredients: While soybeans are standard, the, Codex standard allows for the use of other legumes or mixed ingredients in some contexts, provided they follow the same production process.🌱
