Hello Friends! Thanks for stopping by! I'm making Country Style ribs today with a side of Ranch potatoes. Both are a hit here at our house. To be honest though it's dessert that I'm really looking forward to! 😁
Western Country Style Ribs
Serves 4
Ingredients
3 # Pork Country Ribs
1 C. Bar-b-q Sauce
½ C. Tomato Juice
2 T. Italian Salad Dressing
1 T. Dried Parsley Flakes
1 Small Onion, diced
Directions
Place the ribs in an ungreased 13 X 9 baking pan. Cover with foil. Bake at 325°
For 1 ½ hours, or until just tender; drain. Combine remaining ingredients; spoon over ribs.
Bake, uncovered, 45 minutes longer, basting occasionally. Cut into serving size pieces.
And,
Ranch Potatoes
Ingredients
2 pounds small red potatoes, quartered
¼ Cup vegetable oil
2 tsp. Ranch Dip Mix
Directions
Preheat oven to 450°F. *
Place potatoes in a 1-gallon-size Zipper Bag and add oil; seal bag. Toss to coat.
Add seasoning mix and toss again until coated. Bake on ungreased baking sheet for 30 to 35 minutes or until potatoes are brown and crisp.
*When making these with another dish in the oven that requires a lower temperature I start them together with the lower temperature and longer baking time. When the other dish is done I remove it from the oven and increase the temperature to 450 degrees and allow it to continue to bake while I finish the meal prep.

Chocolate Cake with Peanut Butter Frosting
Prep Time 15 minutes
Cook Time 1 hour +plus time for cake and frosting to cool
Servings 12
Cake Ingredients
2 cups flour
2 cups sugar
3/4 cup Hershey's cocoa
1 1/2 tsp baking soda
1/2 tsp baking powder
2 large eggs
1 tsp salt
1 cup buttermilk
1 cup vegetable oil
1 1/2 tsps vanilla
1 cup brewed coffee (instant coffee will do in a pinch)
Cake Directions
Preheat oven to 300 degrees. Grease the bottom and sides of a 13x9 inch baking pan.
Mix the flour sugar, cocoa, salt, baking powder and baking soda together in a large bowl.
Beat the eggs with an electric mixer until they are bright yellow and slightly thick. Add the oil, coffee and vanilla to the eggs, mix until well incorporated. Add the flour to the mix, alternating with the buttermilk, mixing after each addition until just incorporated. Start with the flour first, then buttermilk, flour, buttermilk and end with flour.
Pour the batter into the prepared baking pan. I always hold the pan up a few inches from the counter and let it fall to get rid of air bubbles in the batter. Bake at 300 degrees for 1 hour. Test for doneness with a toothpick.
OR, Buy a box mix for the most moist, dark chocolate cake you can find!
Peanut butter Frosting
10 tbsp. all-purpose flour
2 cup milk
Cook until thickened and then let cool.
Beat:
2 cups powdered sugar
1 cup (2 sticks) butter
1 cup shortening
1/2 tsp. salt
2 tsp. vanilla
Final step:
1 cup Peanut Butter
Then add both mixtures together. Beat 5 minutes. Add peanut butter and beat another 5 minutes.
Frost cooled cake.
Yes, it's Gob filling with peanut butter added!😁
