Hello Friends! Thanks for stopping by! I'm making Country Style ribs today with a side of Ranch potatoes. Both are a hit here at our house. To be honest though it's dessert that I'm really looking forward to! 😁

Western Country Style Ribs
Serves 4

Ingredients
3 # Pork Country Ribs
1 C. Bar-b-q Sauce
½ C. Tomato Juice
2 T. Italian Salad Dressing
1 T. Dried Parsley Flakes
1 Small Onion, diced

Directions
Place the ribs in an ungreased 13 X 9 baking pan. Cover with foil. Bake at 325°
For 1 ½ hours, or until just tender; drain. Combine remaining ingredients; spoon over ribs.
Bake, uncovered, 45 minutes longer, basting occasionally. Cut into serving size pieces.

Ranch Potatoes
Ingredients
2 pounds small red potatoes, quartered
¼ Cup vegetable oil
2 tsp. Ranch Dip Mix

Directions
Preheat oven to 450°F. *
Place potatoes in a 1-gallon-size Zipper Bag and add oil; seal bag. Toss to coat.
Add seasoning mix and toss again until coated. Bake on ungreased baking sheet for 30 to 35 minutes or until potatoes are brown and crisp.

*When making these with another dish in the oven that requires a lower temperature I start them together with the lower temperature and longer baking time. When the other dish is done I remove it from the oven and increase the temperature to 450 degrees and allow it to continue to bake while I finish the meal prep.

Chocolate Cake with Peanut Butter Frosting

Prep Time 15 minutes
Cook Time 1 hour +plus time for cake and frosting to cool
Servings 12

Cake Ingredients
2 cups flour
2 cups sugar
3/4 cup Hershey's cocoa
1 1/2 tsp baking soda
1/2 tsp baking powder
2 large eggs
1 tsp salt
1 cup buttermilk
1 cup vegetable oil
1 1/2 tsps vanilla
1 cup brewed coffee (instant coffee will do in a pinch)

Cake Directions
Preheat oven to 300 degrees. Grease the bottom and sides of a 13x9 inch baking pan.
Mix the flour sugar, cocoa, salt, baking powder and baking soda together in a large bowl.
Beat the eggs with an electric mixer until they are bright yellow and slightly thick. Add the oil, coffee and vanilla to the eggs, mix until well incorporated. Add the flour to the mix, alternating with the buttermilk, mixing after each addition until just incorporated. Start with the flour first, then buttermilk, flour, buttermilk and end with flour.
Pour the batter into the prepared baking pan. I always hold the pan up a few inches from the counter and let it fall to get rid of air bubbles in the batter. Bake at 300 degrees for 1 hour. Test for doneness with a toothpick.

OR, Buy a box mix for the most moist, dark chocolate cake you can find!

Peanut butter Frosting
10 tbsp. all-purpose flour
2 cup milk
Cook until thickened and then let cool.
Beat:
2 cups powdered sugar
1 cup (2 sticks) butter
1 cup shortening
1/2 tsp. salt
2 tsp. vanilla
Final step:
1 cup Peanut Butter

Then add both mixtures together. Beat 5 minutes. Add peanut butter and beat another 5 minutes.
Frost cooled cake.

Yes, it's Gob filling with peanut butter added!😁

Hello Friends! Thanks for stopping by! Today's recipes are both new to me. It was Primary Election day on Tuesday. I'm privileged to say I serve on a local election board with 5 of my neighbors. We enjoy being together and serving our community. We also eat very well! Each of us brings something to share. These recipes are two of the many delicious things we enjoyed.

Roast Beef Sliders*
Prep Time 10 minutes
Cook Time 22 minutes
Servings 12 sliders
Ingredients
Bread
1 pk Hawaiian Rolls
Butter Mixture
1/3 Cup Butter, melted
2 T. Dijon Mustard
1 T. Poppy Seed
1 T. Minced Onion
1 T. Worcestershire Sauce
Filling
12 Sharp Cheddar slices
12 roast beef slices
At least 1 hour before baking: (or can be made ahead and refrigerated overnight)
Spray oven safe dish with cooking spray. Cut rolls in half horizontally. Place bottom of rolls in dish and brush on half of butter mixture. Layer meat and cheese on the rolls. Top with the remaining roll section. Brush remaining butter mixture on top of rolls. You can sprinkle some additional minced onion on top if you'd like.
Cover with foil.
To bake: Heat oven to 350° F. Place covered dish in oven, bake for 12 minutes. Then remove foil and bake for another 10 minutes.
* Can also use this recipe with ham and colbyjack cheese. You can even make this half beef/cheddar and half ham/colbyjack

And,

Zucchini Pudding Nut Bread
Ingredients
2 Eggs
1 C. Oil
2 C. Sugar
2 C. Zucchini, grated
2 tsp. Vanilla
3 C. Flour
1 tsp. baking soda
¼ tsp. baking powder
1 tsp. salt
1 (3 3/4oz) pkg. instant vanilla pudding
1 C. chopped walnuts
1 C. Blueberries or Maraschino Cherries
Beat eggs; add oil, sugar, grated zucchini, pudding mix, and vanilla. Mix lightly, but well.
Sift dry ingredients and mix into first mixture. Add nuts and blueberries or Cherries.
Pour into greased and floured loaf pans (2 large or 4 small). Bake at 350° F for 1 hour or until toothpick comes out clean.
Enjoy!

Today we're thinking Bar-B-Q! We could all use a cook-out!

Barbecued Picnic Chicken
TOTAL TIME: Prep: 15 min. Grill: 45 min. YIELD: 8 servings

Ingredients

2 garlic cloves, minced
2 teaspoons butter
1 cup ketchup
1/4 cup packed brown sugar
1/4 cup chili sauce
2 tablespoons Worcestershire sauce
1 tablespoon celery seed
1 tablespoon prepared mustard
1/2 teaspoon salt
2 dashes hot pepper sauce
2 broiler/fryer chickens (3-1/2 to 4 pounds each), cut up

Directions

1. In a large saucepan, sauté garlic in butter until tender. Add the next 8 ingredients. Bring to a boil, stirring constantly. Remove from the heat; set aside.
2. On a lightly greased grill rack, grill chicken, covered, over medium heat for 30 minutes, turning occasionally. Baste with sauce. Grill 15 minutes longer or until a thermometer reaches 170°, basting and turning several times.
Test Kitchen Tips
This sauce is best when made a day or two in advance, giving the flavors time to come together.
If you don't have chili sauce on hand, you can use 1/4 cup extra ketchup or 1/4 cup cocktail sauce.
Try this cool-guy move if you don't have a basting brush: Tie a few sprigs of rosemary or another hearty herb together with twine, then baste with it.

Barbecued Beans
TOTAL TIME: Prep: 5 min. + standing Cook: 10 hours
YIELD: 12-15 servings

Ingredients

1 pound dried navy beans
1 pound bacon strips, cooked and crumbled
1 bottle (32 ounces) tomato juice
1 can (8 ounces) tomato sauce
2 cups chopped onions
2/3 cup packed brown sugar
1 tablespoon reduced-sodium soy sauce
2 teaspoons garlic salt
1 teaspoon ground mustard
1 teaspoon Worcestershire sauce

Directions

1. Place beans in a large saucepan; add water to cover by 2 in. Bring to a boil; boil for 2 minutes. Remove from the heat; let stand for 1 hour. Drain beans and discard liquid.
2. In a 5-qt. slow cooker, combine remaining ingredients. Add the beans. Cover and cook on high for 2 hours. Reduce heat to low and cook 8-10 hours longer or until beans are tender.
