A little PSA on what’s going on at Hillcreek Farms.
A couple of years ago I started raising akaushi wagyu F1 beef and had a hard time getting it sold. I found that a lot of people don’t know much about Wagyu and no one knew us which makes it hard to sell to our community.
So with that being said a little info on the akaushi wagyu breed. Akaushi is one of 4 types of Wagyu breeds. Wagyu literally means Japanese cow. There is Akaushi ( red or brown Wagyu) also known as the emperor’s herd) and is from southern Japan. Black Wagyu which is the most known of the breeds . And polled and shorthorn breeds. The advantage of Wagyu beef is its high marble content and its heart healthy fat. Wagyu contains monounsaturated fats , high omega 3 and oleic acid which is good for bad LDL and reducing heart disease. The marbling contributes to a very tender and flavorful meat and akaushi has the highest amounts of these benifits but akaushi is not as prominent in its fat content as the well known black Wagyu. Akaushi is also better on pasture than the others because of it genetic crosses at it inception by crossing with British Devon and Korean hanwoo in the 1870s and simmental in the early 1900. Since then it’s been a closed genetic breeding. It was recognized in 1944 as its own breed. So now you know a little about the breed. I had F1 Akaushi / charlais cross steers that I was able to sell and decided to do my own crosses so I bought new cows and will be breeding to some of the top Akaushi bloodlines in the nation. Sad part is it’s gonna take a couple years before my line is ready to sell. One of the reasons Wagyu is at a higher price than standard cattle is the limited amount of the breed and the slow development of the calves to maturity which is 6 to 12 months longer meaning we have to feed them longer as well as the cost to replace stock. But like I said it’s healthier and fattier and more buttery and tender than standard breeds. I hope this gets you thinking of trying locally grown Wagyu beef. And I hope you give us a try. Soon we will be branching out to haired sheep and pigs and bourbon red turkeys thanks to my wife getting a tom at the white county ffa auction so please stay tuned😁

I would like to take a moment and thank everyone who has supported us at the green market and at the Flatt festival. Our community is amazing and we so appreciate all your support. We have our little store at the farm that is open weekday nights and weekends. Come by and get your favorite canned goods. Pickles, peppers, bbq sauces, salsas and my wife’s awesome tomato soup and marinara. We also have farm fresh eggs ready for your cooking needs. We are possibly looking to expand to some new markets so if you have recommendations for great local markets let us know. See you all at the green market today in Sparta. Got new sweet and dill zucchini relish on hand and new balsamic Pablano and garlic. All our staples including tomatoe soup for these fall months. Thank you all for all your support over the years. We have donated to the white co. FFA auction on Saturday so come out to the high school and support the program. Big auction. We will be at the Lester Flatt festival as well next month
