K... Ive been asked this ALOT- So I have Septembers meal plan and recipes. If you want a full meal plan, recipes, grocery list- it is 25 bucks... And ability to call or text to help cook any of them. Your month is planned with healthy balanced meals that some are super fast, and some take a little longer. Some tips are included for health focus- but I can give added tips to help make things higher protein, or whatever you are aiming. The general idea is less processed foods, fresh whole ingredients, and toward the blue zone diet. But some meals will be more indulgent. It will be a PDF. Comment below for yours.

Made homemade marshmallows today. They aren't set up yet. The fluff tastes pretty good. I think I will cut the marshmallow root in half as it's a little strong in taste. But this was made with allulose and beef gelatin. (Recipes with other sugars and agar are available). This is 0 sugar, protein enriched, gut healing, and anti-inflammatory treat. I think even this strong it will be good in hot chocolate and smores. Interesting point: marshmallow stopped being used in marshmallows because of the destruction of swamp habitats, so it became unavailable...

The Meal Plan for the Week! What meal do you need to know how to make!
Today - Rojo Pollo (This isn't some authentic dish. My kids named it red chicken cause my colorblind kiddo thought it was green)! It is pureed roasted veggies with enchilada sauce. Cook some chicken and noodles in it. One pot, crazy easy. (Gabriel my 7 yr old is in charge of making this one)
Tuesday - We are having left overs! We have so much built up, time to clear it out. Plus its the big sports night.
Wednesday - Making Bread that morning and French toast for dinner. We healthify it a bit by adding yummy fruit smoothies that have protein and mushroom and spinach! (I'll make the bread but my 11 yr old will be doing the french toast. He does his dinner assignment without any help)
Thursday - Gumbo! This is heavy on the meat but you need to make it heavy on the veggies! This is great on a week day cause its slow cooker meal.
Friday - Stew. Yep its soup season. Potatoes, carrots, green beans, etc!
Saturday and Sunday will depend on weather- Tiberius wants to do a cook on the fire pit meal, so if we don't have too much precipitation he will be making chili con carne! From his new campfire cooking book. But we will add a few veggies in. Remi (who obviously is more me cooking with aid from her wants heart shaped ravioli with a cream sauce and heart shaped carrots.

In need of a meal plan?
Monday (today): healthy navy bean and ham soup! My 7 yr old will be making this! Make a bit extra to freeze or can for easy meals later.
Tuesday: left overs
Wedensday: crepes and sausage and fruit smoothies. My 9 yr old will teach you!
Thursday: Pumpkin Gnocchi and garlic curry cream sauce. More advanced meal for sure... but I'll make a bunch of gnocchi to freeze for easier use in later days.
Friday: Homemade Ramen! Veggy loaded, bone broth, yum! We will see if I feel like doing homemade potstickers. My 11 yr old will be doing this meal.
Saturday: fish/chicken tacos
Sunday: pancakes (high protien and served with berries/pineapple) (this will be "cooked" by my 3 yr old)
Of course with each meal I also have my salad bar stocked and accompanying it.

Chicken noodle soup for every moment!
I make a bone broth which isn't actually too hard. So one thing I do to make this easier is save bones and veggi scraps (carrot peals, carrot tops, celery bottoms and leaves, onion peals, old veggies not rotten but not edible, etc). I put them in a gallon bag in the freezer. When it's soup time I throw in some bone in chick thighs or chicken drumsticks, and the scraps in a pressure cooker and cook it to death. Lol.
While it's cooking I saute veggies in seasoning and butter. You can pick whatever but I like carrots, celery, onion, and bell pepper.
Puree up some mushrooms or cream of mushroom with cauliflower, little water, and spinach. This thickens the soup and adds earthy tones plus nutrition. My kids struggle with cooked spinach so this makes the soup pretty and more likeable.
Then you just combine everything! Strain your bone broth. Strip the chicken off the bones and add it back to the broth. Add your mushroom/spinach/cauliflower puree. Add in the sautéed veggies.
Ideas for seasoning: chicken boullein for the salty chicken flavor, add pesto, garlic, onion, basil, turmeric, and pepper.
Finally add your noodles. I love a thick homemade noodle but you do you. Nutritional and kid approved. Kick those winter yucks.

Throw in pureed squash, onion, and can of tomatoes
Throw in a saute pan with:
A Can of enchiladas sauce
Can of black beans,
Can of pinto beans
Can of corn
2 bell peppers cut up
Diced onion
3 cans of roast beef
1/2 cup of lentils
1/2 cup of rice
Season how ever you season tacos (in do cumin, paprika, chili powder, garlic, and beef boullein (sp)). Cook until rice is tender. Add little water if you need. Serve with chips or tortilla shells.

Nope, no picture- just words. The world sometimes feels just a little more distant, little more isolated, so this is just an invite. Today's meal suggestion. Fry up some veggies and garlic in olive oil. I prefer, squash, carrots, bell peppers, tomatoes, onion, cauliflower, kinda whatever is on hand. Great way to use old veggies. Then purree them. Add garlic powder, paprika, chicken broth or powder, salt, red wine vinegar, and either fresh basil or pesto. I like to add spinach and a tablespoon of cream. Feel free to add sausage or chicken (I'm meatless for 14 days). Serve over whatever (brown rice and quinoa for me today cause I need the complete protien).

Trying to share some helpful tips for quick tasty healthy meals.
Meet insta red curry stir fry.
This is the insta packet of brown rice/quinoa, frozen bag of broccoli and stir fry veggies, a whole jar of red curry paste, and some peanut butter (or peanut sauce). I also sprinkled in some peanuts. Fry it all up and it's done. You could change the sauce to teriyaki or orange or green curry, whatever you fancy. And you could add a can of chicken in for protien but I'm daniels fasting.
