Chicken noodle soup for every moment!
I make a bone broth which isn't actually too hard. So one thing I do to make this easier is save bones and veggi scraps (carrot peals, carrot tops, celery bottoms and leaves, onion peals, old veggies not rotten but not edible, etc). I put them in a gallon bag in the freezer. When it's soup time I throw in some bone in chick thighs or chicken drumsticks, and the scraps in a pressure cooker and cook it to death. Lol.
While it's cooking I saute veggies in seasoning and butter. You can pick whatever but I like carrots, celery, onion, and bell pepper.
Puree up some mushrooms or cream of mushroom with cauliflower, little water, and spinach. This thickens the soup and adds earthy tones plus nutrition. My kids struggle with cooked spinach so this makes the soup pretty and more likeable.
Then you just combine everything! Strain your bone broth. Strip the chicken off the bones and add it back to the broth. Add your mushroom/spinach/cauliflower puree. Add in the sautéed veggies.
Ideas for seasoning: chicken boullein for the salty chicken flavor, add pesto, garlic, onion, basil, turmeric, and pepper.
Finally add your noodles. I love a thick homemade noodle but you do you. Nutritional and kid approved. Kick those winter yucks.
