If you haven't had it before, let me tell you: this is the cut South Americans dream about. In Brazil and Argentina, Picanha is THE most prized piece of beef on the whole animal. It's the undisputed star of every churrasco (Brazilian BBQ) — traditionally skewered in a C-shape and cooked low and slow over open fire, basting itself the whole time. They actually call it the "queen of cuts" in Brazil. A lot of South Americans will tell you straight up: it's better than a ribeye.
Here's why it's so special — that thick fat cap on top isn't trimmed off. It's left on intentionally because as it cooks, it melts down and bastes every inch of the meat in rich, beefy flavor. The result is incredibly tender, juicy, and full of that deep, natural beef taste. Well-marbled, beautiful texture, the real deal.
