Adobo is a popular seasoning with many different variations around the world.
In the Caribbean, particularly in Puerto Rico, the availability of some traditional adobo ingredients like fresh garlic, olive oil, and wine was limited. This led to a shift towards a dry spice blend, using ingredients like paprika, oregano, cumin, and garlic powder.
This dry spice blend, known as adobo seco, became a staple in Puerto Rican cuisine, used as a dry brine for meat and as a seasoning for various dishes.
