Corsello Butcheria is about having a passion and a vision and seeing that come to light. Vincent and Kasey had the great experience of living in Rome, Italy for 7 years. In that time, they expanded their passion for food, specifically meat. It was there the inspiration for Corsello Butcheria started to take shape. It was a chance shopping trip to to purchase some chicken breast

s that started the love affair with the art of butchery. They went to Sartor Butcher Shop and there met Roberta and Mauro, the owners of this family owned business going back many generations. Vincent had the opportunity to train with the Sartor family and learned the Italian style of butchery. It is this style that Corsello Butcheria is bringing to the Pioneer Valley. Custom cut meat to order, house-made sausages, freshly ground beef to order, chicken cut off the bone. All is subject to change depending on the inventory for the day. The Butcheria is looking forward to service your needs.

There is nothing quite like a room full of people who came for the food and stayed for each other.
That's what our farm to fork dinners at the Urban Food Brood have become, and we wouldn't have it any other way.
On June 11th at 6pm, we're doing it again. Vincent and Executive Chef Teri Skinner are bringing their teams together for an evening built around locally sourced ingredients, live butchering demonstrations, and food served the way it's meant to be, family style, at a shared table, with people who love this stuff as much as we do.
Full bar available: wine, cocktails, mocktails, and craft beer.

When I (Kasey) first moved to Rome almost 20 years ago, I found myself stuck in my apartment, afraid to explore my new home. I sat at the window for hours. Afraid to take the bus. Afraid to get off the wrong stop and get lost.

I called my sister. My five-year-old nephew Collin got on the phone. He said: "T**i, when we do things we are afraid of, we might find we like them." I borrowed his courage and walked out of the apartment to get on the bus. I got off at the wrong stop. but I did eventually find my way to where I was going.

That's still the best advice I've ever gotten. Fun fact, Collin was a part of those first years at the Butcheria.

This past April, we closed our shop on Cottage Street in Easthampton after nine years. We made the hard decision to walk away from 130 Cottage St — and to step into something we couldn't fully see yet. A new business model. The meat share subscription. Locally sourced, less waste, built around the same people who helped build the dream in the first place.

I won't pretend it wasn't scary. It was. We were standing at the window all over again — afraid to move, afraid to get it wrong. And this time, not hours but years.

But we got on the "bus". Or took the leap.

We didn't get off at the "right stop" every time. But we're finding our way. And the share — this new form of the same relationship we've always had with this community — feels like we are finding our way. Which is a huge thanks to you!

Worth it. Every time.

It's how most of the good things in our lives have started.

Today, on Memorial Day, we're thinking about the people who built this alongside us. This is our first Memorial Day not behind the counter. It feels different — quieter in a way we're still getting used to. But the gratitude? That doesn't close.

The friends, family, and customers who walked in during those first weeks — when we were still figuring it out, when nothing was certain, when your showing up meant everything.

The farmers who said yes before we had much to show them. Our amazing team who helped us build this and who we miss so much!

And Vince Sr., a veteran who passed away in 2020, who loved what we were building. Who is woven into the very essence of this place, even now.

Honoring all those that aren’t here anymore but are still with us in memory.

A few people have asked, so here's the simple version:

You order online. You build your share. Good for 2 pickups either monthly or 2x/Month, you choose. We pack your share — locally sourced beef, pork and chicken from Western Mass farms, whole-animal, no waste. A couple weeks later, you pick it up. Urban Food Brood in Springfield or Tip Top Wine Shop in Easthampton. Your choice. After 2 pickups, you can renew with the same selection or get something different.

No rushing. No last-minute decisions at the counter. Just good meat, waiting for you, from people who care where it comes from.

Partner Highlight

Before there was a shop, there was a conversation with Josh Before there was a shop, there was a conversation with Josh Porter.

When we were just starting to believe this thing could actually work — we were looking for Western Mass farmers ready to partner with us — Josh was the first. We met Josh through his wife, Anne. She was Camilla's 2nd grade teacher at the time and it was a parent teacher conference. We explained that we were kind of scattered trying to open Corsello Butcheria and she said her husband is a farmer and supplier. It was the perfect match! Josh has spent most of his life farming and the most excting thing was that he raised an Italian cattle breed, Chianina.

The Porter Family Farm isn't just a supplier. Josh and Anne and their family are neighbors. Believers and moral support. Part of the foundation. We are grateful to continue working with them.

When you buy the meat share subscription, you're buying into that relationship too. Not just supporting our family but theirs too. And that means something to us.

Our new business model and subscription service require some operational adjustments.

While we still get our beef directly from in Ashfield, we've solicited the help of to process and package some of that beef for our Meat Share Subscriptions.

Today I got to go over there to align the details of how we like our meat cut. And I can tell you I had a blast!

Like ourselves, and the Porters, and quite frankly most folks I work with, New England Meat Company is a small family owned business. That means we contribute to the local economy and the money we earn remains right here in the community.

I got to connect with many of the folks there, they are all serious professionals who do quality work and I'm grateful for their willingness to accommodate my preferences.

Stay tuned, we'll have more to share about the farmers and processors with whom we work. It's all part of the vision of a truly local food system.

Ten years ago we didn't have a plan. We were facing uncertainty much like today. And like today, we had curiosity, passion and incredible stories. We also had built incredible relationships all across the world.

A market stall in Rome. A family we didn't expect to meet. A phone call about guanciale that changed everything.

We're still here. Still behind the counter on weekends at the Urban Food Brood. Still showing up at Forest Park. And now — the meat share subscription. A new form for the same relationship.
