OK, you guys keep seeing me with loaded harvests of summer squash… And our supply is far over shooting your demand! 😂
So let’s talk about summer squash, a little more. First of all the variety that we grow is called Butta. A knock off of the word butter, if you can imagine the great tasting flavor! Because of the variety it is pale skinned, and bruises quite easily. But trust me that it is delicious!
Our favorite ways to eat it…
1-
We like to pan fry it with a little oil, salt and pepper and a sprinkle Parmesan
2-
We like to grill it using a grill basket. We combine it with peppers, onion, zucchini, any extra summer veggies we have lying around, but my favorite combination is onions, summer squash, zucchini, and nadapeno peppers (think jalapeño flavor without the spice).
3-
We tried a new recipe for summer squash casserole last night, and the pan was completely cleared out!
This classic Squash Casserole features the creamiest baked squash topped with cheddar cheese and a crunchy, buttery cracker topping!
