We’re highlighting Cortina Sea Bass this week. From the gulf side of Baja Mexico, It’s delicate, flaky, and light in texture — like grouper. We marinated it briefly in olive oil, lemon, garlic, salt, and pepper and then grilled it. So fresh, so good!
