isnā€™t it funny how we grew up thinking an egg is just an egg?

we raise both chickens and ducks here, and once you crack them side by side the difference is obvious. bigger yolk, deeper color, richer flavor. one duck egg can practically stand in for a egg and a half in your baking.

chicken eggs still earn their spot too. lighter, familiar, the one most of us reach for without thinking twice.
