Trina’s been cookin’ and has a family staple to share!
A take on the viral zucchini boursin pasta. Thanks to Cadia, you can make this for four people for under $16
Ingredients:
• 1 bulb garlic (top cut off, root intact)
• 1 container Boursin Garlic & Herb cheese
• 3 medium-large zucchini, diced
• Cadia Olive oil
• 1–1½ tsp Cadia smoked paprika
• 1 tsp kosher salt
• Fresh cracked pepper (optional)
• 1 lb Cadia dried pasta shape of choice
Instructions:
Preheat oven to 400°F. Bring a large pot of salted water to a boil for pasta.
Drizzle garlic bulb generously with olive oil and wrap in parchment paper or foil.
In a baking dish or sheet pan, place diced zucchini, wrapped garlic bulb, and full Boursin round (place Boursin in the center).
Season the Boursin with smoked paprika, salt, and cracked pepper. Toss zucchini lightly to distribute seasoning and olive oil.
Roast for 40–45 minutes.
Meanwhile, cook pasta to desired doneness.
Remove pan from oven and carefully unwrap garlic. Let cool slightly, then squeeze roasted garlic cloves over zucchini and Boursin.
Add cooked pasta directly into the pan and stir everything together until creamy and combined. Season to taste, top with chives if you have some on hand.
