Sweet Valley Beef Company REMEMBER WHEN? Life was a bit less stressful? You could drive down to the post office and not see a single car? Folks made deals on a handshake! Well, we DO!

When the post office was the social center of town? Folks actually drove their sheep and cattle right down “main street” and no one really minded? Kids could still ride their bikes safely a mile or so away to play with friends, and it was okay to play in their front yards? Folks raised their own fruit & vegetables, didn't use chemicals, pesticides, and fertilizers and freely traded their 'viddles'

with their neighbors? Folks raised their own meat to feed their families, be it lamb, fowl, pork, or beef, and they were never given growth hormones, steriods, or antibotics? What if you could live in such a place, in such a time? We are so blessed! OVER ONE HUNDRED YEARS AGO, the Church family homesteaded ground in the beautiful mountians and the Sweet Valley of southwestern Idaho. They built a sawmill here, started raising a family, and some of the very best beef cattle in the country. The sawmill has since gone by the wayside, but we still carry on the tradition of raising some of the best Angus/Angus cross cattle around. Our home and part of our ranch are actually in the Sweet Valley where the spring grasses are lush and the water truly “sweet”! Our cattle range from the beautiful Sweet Valley to the timber and prestine high mountain meadows of the Boise National Forest. All our cattle are born in the fields just across the road from our house, where we can keep an eye on babies and moms. They are all then raised on the ranch, and are only fed grass and hay year around, constituting them “grass fed beef”. We don't believe in giving our cattle growth hormones or steroids; we believe they should grow up just as nature intended on what God provides. Being ranchers we are well aware of how important it is to perserve our environment – it's our livelyhood, as well as the inheritance we will leave our children and grandchildren, for more generations of Church's to come. It is very important that we all leave as small a carbon footprint as possible. Part of our summer grazing is public land and we work very closely with the Boise National Forest Rangers and Idaho State Land Department to be sure no pastures are ever overgrazed and are all given appropriate “rest” years. When our beef is of the appropriate size and weight, it is processed by our local family owned and operated butcher business. They care as much about the quality, tenderness, price, and finished product as we do. The beef is dry-aged for the appropriate time (usually between 9-12 days) depending on the size of the beef. It is then carefully hand carved to our own SVB special specifications to give our customers the very best product for their money. The meat is then wrapped in cryovac packaging so you can see exactly what you are getting; labeled with our SVB label and stamped as to the weight, so you know how much each cut weights. All the beef is then flash frozen so it can go directly to your freezer. Our beef is boneless (except for the shortribs) so you can open your box and know there is no waste – you can literally put on your dinner table, or grill, everything that you have paid for.
