Dobyns and Martin, Grocers

Dobyns and Martin, Grocers Historic Interpreters, providing trade and Colonial Era food ways programming for historic sites, museums and community events.

Rob and Jen have been participating in 18C Living history at a variety of historic sites and museums since the 1980's with a few detours in to the 17C, building a store of knowledge by taking advantage of many educational opportunities offered by museums and historic sites and together have over 50 years experience. They have been members of ALHFAM and NAI and are currently also members of the Mar

yland Loyalist Battalion where Rob is Captain. Jen has been studying period food and material culture from the 17th and 18th Centuries off and on since she graduated from college, attending various lectures, symposia and workshops at a number of historic sites with prominent foodways historians. When we take our "shop" with canvas walls to various historic venues, we try to present, as closely as possible, an 18C grocery using those primary sources to inform our choices of inventory and appearance.

Enjoy fresh-baked bread and watch the 18th-century baking process with Resident Baker Justin Cherry of Half Crown Bakehouse. Each loaf is baked in a reproduction 18th-century clay oven and made of grains authentic to the time period, and, when possible, ground at George Washington's Gristmill.

We hear about the grit from the stones that becomes part of the flour. But how much grit is relative, depending on the type, quality and condition of the stones used.

I'm pretty sure I wouldn't like Roman bread much, having such wonderfully clean flour available now, but if I were a Roman, I wouldn't really know the difference. :-)

In honor of Black History Month, here's an article about Hercules, George Washington's enslaved chef.

If you would like something to read about the subject of enslaved cooks and their contributions, I highly recommend Bound to the Fire by Kelly Fanto Deetz.

In the late 18th Century, Philadelphia was a city of high-end cuisine; however, few know that many of its culinary masters were of African descent like Hercules Posey.

We've been really quiet here. While the business side of things has been set aside until we retire from 21st century work, we haven't totally abandoned it.
Today I found an in interesting blog post from the Wallace Collection I'd like to share. Because I'm such a material (culture) girl and I know some of you are, too.

Explore the theme of Food and Drink in this week's blog as we take take a closer look at an elaborate Sèvres tea service, a seventeeth-century Bohemian beaker and Jan Davidsz. de Heem's stunning painting, Still Life with Lobster.

Humans are good at repeating patterns. Here we see the Roman model of the cafeteria/food court organization of public food service we still see today.

Isn't archaeology amazing?
