Hello, fall! ๐ The first day of autumn calls for something cozy, and our Butternut Squash Soup is the ultimate comfort in a bowl!
Ingredients:
2 medium buttnernut squash, halved and seeded
2 tbsp olive oil (divided)
Salt & pepper, to taste
1 medium yellow onion, diced
1 large apple (Honeycrisp or Gala), peeled, cored, and diced
3 cups vegetable broth (or chicken broth)
ยฝ cup heavy cream (or coconut milk for dairy-free)
ยฝ tsp ground cinnamon (optional)
Fresh thyme or sage for garnish
Instructions:
1. Roast squash at 400ยฐF until tender (30โ35 min).
2. Sautรฉ onion, then apple. Add squash and broth. Simmer.
3. Blend smooth, stir in cream, season to taste.
4. Garnish with herbs and serve warm.
