🍓 Strawberry Bread (craving sweets)
Ingredients
• 1 cup fresh strawberries, diced (patted dry with paper towel)
OR 2 cups frozen strawberries (from two 10-oz packages), thawed and drained well
• 2 cups all-purpose flour
• 1 cup granulated sugar
• 2 tsp baking powder
• ½ tsp kosher salt
• 1 tsp ground cinnamon
(or more, to taste)
• 2 large eggs, room temperature
• ½ cup vegetable oil
(or melted unsalted butter, cooled)
• 2 tsp vanilla extract
• ½ cup chopped nuts
(optional – walnuts or pecans are great)
Instructions
1. Preheat oven to 350°F (175°C). Grease and lightly flour a 9×5-inch loaf pan.
2. In a large bowl, whisk together the flour, sugar, baking powder, salt, and cinnamon.
3. In a separate bowl, whisk the eggs, oil (or butter), and vanilla until smooth.
4. Pour the wet mixture into the dry ingredients and stir gently until just combined (don’t overmix).
5. Fold in the strawberries (and nuts, if using). If strawberries are very juicy, toss them with 1 tsp flour first to prevent sinking.
6. Pour the batter into the prepared pan and smooth the top.
7. Bake for 60–70 minutes, or until golden brown and a toothpick inserted in the center comes out clean.
8. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
✨ Tips for Best Results
• For a pretty finish, sprinkle cinnamon-sugar on top before baking. Or a simple glaze.
• This bread tastes even better the next day once the flavors settle.
• Wrap tightly and freeze for up to 2 months.
