This week's featured find: Colvin Ranch Honey and Honeycomb

Every year we work with a local beekeeper who manages his hives on our ranch. The bees live here from March through November, collecting nectar from wildflowers and native plants in our fields, before they head to almond orchards in California to winter.

We don't have a ton of hives which means we get a limited supply of honey. Once it’s gone, it's gone for the year. Just another sweet way to enjoy the bounty from Southwest Washington’s native prairies.

There's a whole-animal mentality behind a lot of what's on the shelves at Colvin Ranch Provisions, and it shows up in the less obvious products — the chicken broth from Riverbird Farm, the pork and leaf lard, and the suet that can be melted down and purified into tallow.

These aren't leftovers or afterthoughts. They're some of the most useful things in the kitchen: broth as a base for soups and sauces, and lard and tallow for the kind of cooking and baking that gives food real flavor, all of it a way of using more of the animal instead of less. Worth a look next time you're in the store.
