If we were to have some sort of cooking competition in Thomasville that represented South Georgia cooking, what would it be?

As a for instance... I would volunteer/sacrifice my time to judge a Fried Chicken, Collard Green, and Ho Cake competition. Is that oddly specific? Maybe. But i missed lunch.
Also, Hubbard's has chicken ready to go if you need to run some test batches for this hypothetical competition. I might be available to taste test... Hypothetically.
