Pork loin for diner tonight! I often forget about that lean pork cut. Slow cooked in milk, onions, lemon confit and sage. Served with pasta and grilled zucchini.

We don’t home school as we Love our local public school! But today due to the cold weather we did my kind of homeschool. Kids learn how to gut chickens. We did some science with learning the anatomy of a bird, heart, liver, gizzard (and what is in it) lungs and of course guts. We included some PE as gutting birds is fun but physical.
They thought it was easy… until they find out we did 358 without them!
Their biggest surprise was the internal temperature of the birds.

I love to teach them real skills.

A very cold day at the farm. This cold weather is not easy on the animals and on us. Animals need more food/calories to fight the cold, all the water supply is frozen(as expected) so we pre-filled big tubs of water. We crack the ice on top so we can water all the animal through out the day (the water freeze in a couple of hours if not drunk).
But we love when the kids join us!

No market to take care so when the boys are working hard outside making sure all the animal are well taking care off I’m having fun in the kitchen with the kids.
made with our from bolognese, ricotta and fresh mozzarella, milk and of course homemade fresh pasta made with all purpose flour and duck eggs!!!
Good news we made enough for leftover!
