Being home on Mondays means I actually have the energy to cook dinner 😀
I found some beautiful fresh okra at Market Basket about a month ago. I didn’t have time to cook them then, so I froze them whole.
Today, I let them defrost in the pan just enough to slice. I added a splash of apple cider vinegar for a little tang (and to help reduce the slime).
Then I sautéed them, added some chicken broth, tossed in pre-cooked chicken (whatever I had baked or fried), plus a bit of tomato sauce, and let everything simmer until tender.
Simple, clean, and packed with flavor — chicken and veggies with almost no effort.
In Brazil, this is served with rice, beans and polenta, its country food at is best!
