Breakfast Tater Tot Casserole
Ingredients
- Bacon strips, cut into pieces
- 6 large eggs
- Whole milk (about ½ cup, or enough to loosen eggs)
- Butter (1 small spoon / about 1 tablespoon)
- Salt, pepper, and any preferred seasonings (garlic powder, onion powder, paprika work well)
- Green bell pepper, diced
- Red bell pepper, diced
- White onion, diced
- Mushrooms, chopped
- Frozen tater tots
- Shredded cheese (measure w/ your â¤ď¸)
- Sharp cheddar cheese, cubed
- Colby Jack cheese, cubed
- Pepper jack cheese, cubed
How-To:
1.) Cook the Bacon
- Cut the bacon into strips or small pieces. Fry in a skillet over medium heat until crispy.
Remove bacon and drain on paper towels. Pour off excess grease, leaving just a little in the pan if desired for flavor.
2.) Prepare the Egg Mixture
- In a medium bowl or large cup, whisk together the eggs, whole milk, butter, and seasonings until smooth. Set aside.
3.) Cook the Vegetables
- In the same skillet (or a clean one, but the bacon fat is delicious lol), add the green bell pepper, red bell pepper, white onion, and mushrooms. Cook over medium heat until softened and lightly browned. Remove from heat.
4.) Pre-Bake the Tater Tots
- Preheat oven to 410°F. Spread frozen tater tots evenly in an 8x8 baking dish. Bake for 6â7 minutes, just until slightly crisped on the outside.
5.) Assemble the Casserole
- Pour the egg mixture evenly over the pre-baked tater tots. Sprinkle the cooked bacon over the eggs. Add a layer of shredded cheese. Spread the cooked vegetables evenly over the top. Add another layer of shredded cheese. Finish by placing a few cubes of sharp cheddar, Colby Jack, and pepper jack on top.
6.) Bake for 20 minutes at 410F, or until the eggs are set in the center and the cheese is fully melted and bubbly.
7.) Serve! Let rest for 5 minutes before slicing into it.
