It might not look like much but it tastes good! Hilltop smoked sausage cut into bite sized pieces, Hilltop ground pork cooked & seasoned with Cajun seasoning, diced onions and green peppers, a little butter, minced garlic, heavy cream, cream cheese to thicken & chunks of crab meat just before serving over bow tie pasta.

It’s been a busy week at the fair in Pana. Thank you to everyone who stopped by to eat, drink or visit. Sorry to anyone who missed pork chops….we sent a lot out the window last night and a decent amount the other nights. Hoping everyone had an enjoyable fair and weekend filled with laughter and love.

Did you know that we offer catering as well? Yep! Right now we’re booking into later fall and winter. We also offer holiday “heat & eat” where we have your meat, sides and desserts ready a day ahead and you follow heating instructions to serve a delicious meal without the stress & mess!

I’m clearly NOT going to make it to the fair by noon. Trying to reach temps on everything before we load up and head in.

Called in reinforcements this morning (thank you Gayle & Brenda—moms) for the assist on prep and cleanup. Greatly appreciated!

Have you tried the feed pan yet? If you’re hungry, or want to try EVERYTHING and share with your friends or family, this might be the dish for you! Fries, Mac, beans, coleslaw, pulled pork & brisket…can add cheese if you like. It’s NOT for the dainty eater.

As I told someone last evening, if you walk away from our trailer hungry, you must have not ordered anything but a drink!

Fresh batch of pork chops on the smoker for you tonight. Did you know these are a little over an inch thick boneless chops, lightly seasoned?! They’re pretty darned good. Don’t take my word for it, several people will concur.

Also, in case you or a loved one have food allergies, we do have a short supply of Naked Wings on board. These will have extra light olive oil and salt at the most. Sometimes it’s just a little salt and sometimes it’s just wings with absolutely nothing. And, since we don’t sauce anything you get to select how and if you want to modify.

What’s this??? Brisket for the Pana Tri-County Fair & the bacon getting ready to be added to the Hilltop Baked Beans. (It’s cooking now & will be a beautiful brown when it goes in.).

And yes! I am bringing you Pork Chop on a stick like last year that everyone loved. All your favorites and more.

Don’t forget that we will also have lemonade, unsweetened tea (Im bringing sugar packets), bottled water & maybe a refresher. We have flavors you can add to your tea & lemonade as well.

Come see me, across from the grandstand all week and bring your friends ❤️

Prepping today and tomorrow for Pana Tri-County Fair! We will for sure be bringing pulled pork, brisket and pork chops on a stick! Your favorite sides will be there too…Mac n cheese, baked beans, coleslaw, fries….and chocolate chip cookie bars for dessert! (We have other things too…don’t fret. I do try to take care of our food sensitive friends 😉)
