Ingredients:
* 1 box lasagna noodles
* 1 jar pasta sauce
* two Yoder Family Farm ricotta cheese packages (~1 lb each)
* 1/4 wheel Yoder Family Farm hard cheese, Garlic Basil flavor
* 4 eggs
* 1 lb ground beef (or substitute of choice)
* 1 onion, chopped
* 2 cloves garlic, finely minced
* 2 Tbsp olive oil
* fresh or dried Italian herbs (basil, oregano, thyme recommended)
* salt
* pepper
Recipe:
1. boil the lasagna noodles according to the package directions (or until al dente), and set aside.
2. In a skillet, heat the olive oil and add the chopped onion, minced garlic, and ground beef, season with salt and pepper, and cook until beef is well done. Mix in half the jar of pasta sauce, and set aside.
3. Grate the garlic basil hard cheese.
4. In a medium-large bowl, combine the two pounds of ricotta, with the eggs, salt and pepper, fresh or dried herbs, and half the grated cheese. Mix thoroughly with a spatula.
5. In an oven-safe baking pan (about 7"x9"), layer in the prepared ingredients, beginning with lining the base of the pan with lasagna noodles, then spread in the ricotta-cheese-mix with a spatula, followed by another layer of lasagna noodles, then the beef-onion mixture, followed by a final layer of lasagna noodles, topped with the remainder of the pasta sauce, and a final top sprinkling of the remainder of the grated Garlic-Basil cheese.
6. Bake for 45 minutes at 375°F, then slice, serve, and enjoy!
