Fresh delivery to Cagle’s Feed & Farm Supply!

We are so thankful for family-owned businesses like Cagle’s that choose to support other local family farms. Those partnerships mean so much to us, and we truly appreciate them.

Today, I delivered a beautiful freshly rendered batch of our all-purpose tallow. Each batch is freshly rendered and takes 5–7 days to make from start to finish. It isn’t rushed, because we believe quality is worth the time.

🥩 Understanding Beef Grades

Have you ever wondered what the different grades of beef actually mean?

The USDA grades beef based primarily on marbling (the small flecks of fat within the meat), which plays a big role in tenderness, juiciness, and flavor.

🥉 Select – Lean with very little marbling. It’s the grade most commonly found at lower price points in grocery stores.

🥈 Choice – More marbling, making it more tender, juicy, and flavorful. This is the grade many steakhouses prefer.

🥇 Prime – The highest USDA grade with abundant marbling. It makes up only a small percentage of all beef and usually comes with a premium price tag.

At Pitts Cattle Farm, our beef consistently grades Upper Choice ~right at the top end of the Choice category and just below Prime. It offers exceptional tenderness, rich flavor, and beautiful marbling without the Prime price.

But quality is only part of the story.

🥩 Don’t judge a steak by its shape.

One question we get a lot is, “Why are your filets shaped like that?”

The answer is simple. They’re the scalloped ends of the tenderloin, and they’re actually one of our favorite parts!

Many people expect every filet to be a perfect, round medallion because that’s what they see in grocery stores and restaurants. But when you’re buying a whole animal, every cut is a little different. Those scalloped end pieces are just as tender, juicy, and flavorful as the center cuts. Sometimes even more so.

At Pitts Cattle Farm, we don’t trim away perfectly good beef just to make every steak look identical. We believe in using the whole animal and offering you quality over cosmetics.

Hank made a quick video explaining exactly why these filets look the way they do. Take a look, and next time, don’t pass them up because of their shape. Your taste buds won’t know the difference, but your wallet might appreciate getting one of the best steaks in the case!

🐓🍯 Honey Sesame Chicken (Family Favorite!)

I had a few people ask me this past weekend for my Honey Sesame Chicken recipe, so I thought I’d share it here. This is one of the easiest meals I make and one of my family’s favorites. Even better, it works great in the crockpot on busy days!

I made mine with pasture-raised chicken from I.A.G.D.T.B.A. Farm, and it turned out delicious.

Honey Sesame Chicken

✅ 1 pack boneless chicken thighs
✅ Salt & pepper
✅ 1 cup honey (local is best!)
✅ 1/2 cup soy sauce
✅ 1/4 cup ketchup
✅ 2 tbsp vegetable oil
✅ 2 cloves garlic, minced
✅ 1/2 cup diced onion
✅ 1/4 tsp red pepper flakes
✅ Sesame seeds

Directions:

Place chicken thighs in the crockpot and season both sides with salt and pepper.

In a bowl, combine honey, soy sauce, ketchup, oil, garlic, onion, and red pepper flakes. Stir well and pour over the chicken.

Cook on LOW for 3–4 hours until tender.

Stovetop option: Simmer on medium heat for about 1–1½ hours (depending on the amount of chicken).

Sprinkle with sesame seeds and serve over rice.

This recipe gives you that sweet-and-savory takeout flavor with simple ingredients you probably already have at home. If you make it, let me know what your family thinks! ❤️🍚🐓
