In my place of business my customer’s satisfaction comes first. I keep everyone’s meat separate, therefore I can treat your meat individually. I will season your specialties the way you prefer. I do like to work with at least a 10 lb. batch to make sure it is seasoned correctly since I do not combine your meat with anyone else’s. It does take me longer for processing this way, but I think the time

is worth your wait. I then will call you when your deer is processed. I process deer in the order in which it came in, but if you need to get your meat back for a special occasion let me know and I will try to get it done for you then. I can not get everyone’s deer done before Christmas however. Your patience is appreciated as I want you to be satisfied with what you receive back.

The Farmers Market in Seward had begun the season today May 16th. I will not be there today but I’ll be back on Wednesday with Jerky Slims a lots of different sausages.
York Market and David City markets start soon also so you can find me in York on Thursday and David City on Friday along with the Wednesday and Saturday in Seward.

As you prepare to go hunting keep in mind the importance of field dressing Here are some basic instructions. I would however include a tip to wash out the body cavity and pack it with ice to get the meat cooled off Also split the pelvic bone to insure you remove the a**s Those who try to just cut around rarely ever get it cleaned out and when the deer gets hung up f***l matter drops down on your meat. Let’s have a great deer season. Have fun and be safe. Keep in mind that a good end product comes from a well taken care of deer and a good shot so sight in that rifle and take care to do a proper field dressing job. Make sure to clean out all the insides split the pelvic bone to assure everything is removed then wash out any debris left. Running cold water thru the insides will help cool the meat faster and get rid of a lot of bacteria growing particles. Then place a bag of ice inside the cavity to keep that meat cool until you can get it to a processor or until you get it deboned. If you need more helpful hints in field dressing there are many pamphlets out And the internet is a great tool This part of the process is so very important

Rifle season for deer is approaching soon! I will be posting information on proper field dressing techniques when I get more time and I’ll be getting out postcards to my regular customers hopefully soon.

Remember that I am still doing farmers market until the end of October so you need to call ahead to bring in a deer It feels more like fall now that we finally had a cooler night ; which makes for better hunting.

It’s too warm to think that hunting season is upon us. As usual I will be at farmers markets until the end of October so anyone wanting to bring in a deer will need to contact me and make arrangements to drop a deer or meat off at the butchery I will be open by appointment until rifle season in November. The week of rifle season I will be open from 8:00 am until 5:30 pm. Every day
After that my regular schedule is Monday through Friday 8:00-5:00 and Saturday from 8:00-noon. Be safe out there. During warm weather take along plenty of water (to stay hydrated and to wash out a carcass if you happen to shoot something). Also take along ice to pack in the cavity until you get the meat taken care of or in a locker. Good hunting
