Is it a mountain, or is it cheese? 🏔🧀 How about a mountain made of cheese?

Summit is an ashed soft-ripened cheese made from pasteurized goat's milk 🐐 by Mountain Lodge Farm, a farmstead creamery in Eatonville, WA. It's sort of like a Valençay- or Pouligny-Saint-Pierre- style cheese, but with a PNW twist. 🌲

Mountain Lodge Farm is at the base of Mt. Rainier (Tahoma), the Crown Jewel of the Cascade Mountain Range. Summit is crafted in the image of Mt. Rainier, which is also one Washington State's 5 active volcanoes.

This cheese offers a small but mighty explosion of flavor: milky, tangy, minerally, with a bit of brown bread-crust earthiness and a hint of fermentiness at the rind. The cheese starts out chalky in the center and somewhat firm, but becomes progressively delicate and molten as it ages--sort of like an homage to the actual mountain and its 🌋 contribution to our region's landscape.

If you are looking for a show-stopper for your next cheese board, or for a solo cheese to impress, this is the one. 👌

Here's a pregnancy-friendly version of our Cheese Platter that went out this weekend. 🤰🏾🧀 While our platters are set and don't allow customization, we do accommodate for food allergies and special circumstances (like a pregnant person whose doctor has told her that she cannot have raw-milk or soft cheeses, for example). While the the vast majority of cheeses we sell--aside from our softer cheeses aged under 60 days, of course-- are made with raw milk, we were able to make this one happen.

🧀 Jasper Hill Farm Porto-Washed Harbison (cow's milk / bark-wrapped soft-ripened cheese / Vermont) *the request was for just one soft cheese for the non-pregnant people
🧀 Il Fiorino Pecorino Toscano Fresco (sheep's milk / uncooked-pressed cheese/ Italy)
🧀 Widmer's Cheese Cellars Mild Brick Cheese (cow's milk / washed-rind cheese / Wisconsin)
🧀 Stelvio DOP (cow's milk / Alpine-style cheese / Italy)
🧀 Sant Gil d'Albio Garrotxa (goat's milk / uncooked-pressed cheese / Spain)
🧀 Kaasboerderij 'T Groendal OG Kristal (cow's milk/ aged Gouda / Belgium)
🍒 Dried tart cherries (California)
🥜 Marcona Almonds (Spain)
🍯 Girl Meets Dirt Vanilla Plum Medley Spoon Preserves (Eastsound, WA)

⏳️ There's less than one week left to sign up for our Cheese of the Month Club to get in on the May release!

We have several subscription options available for the club: one month, three months, six months, and one year. The club is released on the second Thursday of every month, and each month members receive a selection of 5 different cheeses (up to two pounds total) in different styles, milk types, and textures. We keep the cheeses a surprise until you receive them! The selection comes with a handout including tasting notes, pairing suggestions, a cheese of the month fact, and a cooking or storage tip.

Since May is American Cheese Month, you can be assured that there is going to be an all-star 🇺🇲 🧀 selection of artisanal domestic cheeses in this month's box. 👌

Want to join the cheesy fun? Head to our web store and sign up by Saturday at 6pm. (You can also come in and sign up in the shop if you prefer.) We are looking forward to sharing some excellent cheeses with our members this month!

It's Thursday... which means that another Raclette Happy Hour is upon us! 💃

Come to the cheese shop today between 3-6pm for a delicious dish of molten Raclette cheese poured over crispy potato chips and paired with tangy cornichon pickles and cured meat (meatless option also available). We've got four different flavors of Raclette cheese and five different kinds of potato chips to rock your world.

On top of the options for your Raclette, there are also several ways you can enjoy the dish: hang out at the shop and eat it with a refreshing non-alcoholic bevvie, go next door to Hey Jude to poke around while you wait for your cheese to be done, head two doors over to Little Thing Wine to enjoy a glass of wine with your hot cheese goodness.

See you soon!

There are just 2 tickets left for Sunday's cheese class at The Pantry in Ballard. 👀 The May 3 class is "The Cheese Course: America."

We will taste 9 American cheeses from across the country in a variety of styles and milk types, each one paired with a delicious accompaniment intended to highlight the cheese. It's going to be a fun time-- and a great way to kick off celebrating American Cheese Month! The tickets are available through The Pantry’s website; there's a link to it through our bio.

🌟Shepherd's Hope🌟

We are over the moon for this fresh, pressed cheese from Shepherd's Way Farms in Minnesota. 😍🐑

Shepherd's Hope symbolizes the promise of fresh milk, and boy does it deliver! This cheese is made from pasteurized sheep’s milk, and it is a fresh cheese--but not like you might be thinking (like a fresh Chèvre or Vache!). It's firm enough to be sliced, but soft enough to be spread or smeared. The flavor is mild and milky with a subtle tang. It's the perfect canvas for snacking at any time of day. 😋

Here are some examples: Tailor put it on toast with The French Beekeeper's Alfalfa Honey and cinnamon, and it tasted like a cream cheese Danish. 🤤 Janee' paired it with Girl Meets Dirt’s Vanilla Plum Medley Spoon Preserves, and it was perfectly sweet and tangy and balanced, so you could taste the cheese, the jam, and their marriage. 🤌 Courtney has been eating it on sourdough crackers with a drizzle of O-Med Novo First-Press Olive Oil and some flaky Maldon sea salt.

Shepherd's Way Farm is an award-winning farmstead sheep dairy and a family farm committed to sustainable, regenerative farming. They milk 200 ewes and hlhand-craft a variety of cheeses in Nerstrand, Minnesota.

Come snag some in the shop this week. We're closed Sunday and Monday, but we are open Tuesday through Friday 12-7p and Saturday 11a-6p. We hope to see you!

Mountain Lodge Farm is in the house!

Y'all have been enjoying their raw, aged cheeses, Wonderland and Devil's Dream, all winter, but today the farmstead goat creamery from Eatonville dropped off their finally-in-season younger cheeses!

Glacier is the small, classic Crottin, with a dense and flinty interior and mellow lactic flavors. Paradise is the taller, "Northwest Crottin," with a mousse-like texture and fresh cream notes. The fresh Chèvre is spreadable white gold, with clean-tasting, mild milkiness.

Fryingpan Halloumi fries up beautifully into firm-but-chewy buttery goodness, perfect for this time of year as grilling weather starts to set in--but you can also slice or shave it to top a fresh salad.

And the OGs? Wonderland is the natural-rinded Tomme, with gentle caramel and toasted almond flavors; it's perfect paired with a shortbread cookie, stone fruit preserves, and a touch of fresh sage. Devil's Dream is Wonderland without the rind, and with cracked peppercorns throughout. It has a softer, bouncier texture and tastes like gingerbread spice.

We are so excited to have these cheeses join our lineup. Come check them out! We are closed Sundays and Mondays, but we will be back open next week, Tuesday through Friday 12-7p and Saturday 11a-6p. 🤙🧀
