Did you know it's easy to make potato leek soup? Potatoes are known as an Irish staple. Leeks are a celtic thing and a good thing too.
Take 2 lbs. any kind of potato, peel and dice. Use 2 leeks--cut just aboe the white point, Look at the cut and see if there is any dirt on either cut piece. Probably the white piece is clean. Halve and slice thin. The other piece cut where the dark green starts and put the dark piece aside for another use. The rest, cut as above, rinsing the pieces in a sieve to rinse off the dirt and add to the white part.

Melt 2 tablespoons of butter and 2 tablespoons of olive oil (or use all oil if you prefer) in a 2-3 quart soup type pot. Add the potatoes and leeks, stirring occasionally to prevent browining, for about 5 minutes. Add enough water, veggie stock or chicken stock to cover by a couple of inches, freshly ground black pepper, and a pinch of dill w**d. Bring to a simmer, cover and cook till the potatoes are faalling apart. Taste for salt and pepper. Serve with a dollop of .cream or yogurt if desired. I often put a dab of chopped fresh leeks as a garnish.
This is a soup that can be made ahead and reheated, or fancied up with cream, pureed and served hot or cold. Enjoy!

Hi Lovely Followers. This week the soups are mushroom barley (today), potato leek (for the Irish in us, tomorrow), and creamy broccoli for Saturday. The minestrone is awaiting you in the freezer along with refrigerated SW vegetable (touched with chipotle), and Italian greens and rice with egg drops. With any luck at all there will be some sourdough bread tomorrow, too.
