Nettles: the Herb of Spring! Versatile, delicious, and nutritious, once the leaves on this woodland, marshland plant green up you can start harvesting. Harry updated the drying shed, and nettles are the first to grace it. We dry extra for winter soups, but we prefer eating nettles sautéed with butter and onions, then added to eggs. The sting does away once heated. Nettles contain 3x the vitamins and minerals of kale. In fact, they have so much Niacin, or B-6, that you may experience a niacin flush.
