Green's MM Beefalo Beefalo are produced by crossbreeding the American bison with other breeds of cattle. Meat from beefalo is very nutritious.

Green's MM Beefalo was established in August of 2001 with a goal to raise beefalo on a natural diet of grass, and hay and provide meat that is heart healthy with lower fat and cholesterol than regular beef, pork and chicken. A full blood beefalo has 3/8 bison genetics and the other 5/8 of the genetics can come from any combination of other domestic cattle breeds such as angus, Hereford, limousine

, etc. Beefalo is a combination of buffalo and other breeds of cattle, but combining isn't done by mixing them in a bowl, it is strictly by genetics. It has more protein per serving than chicken, pork, or ordinary beef, but has less cholesterol and fat, particularly saturated fats. It also has fewer calories than regular beef. Beefalo can be used like "regular" beef. The same meat cuts are available and the same general recipes for beef dishes may be used. A handy rule of thumb being used by top chefs when preparing beefalo is to reduce the grilling, frying, or boiling time by a third due to having less fat.
