Anna’s Hot Bar has chicken cacciatore and penne with meat sauce today, and it’s seriously so good.

Grab lunch, then stock up for Labor Day with steaks and chops for the grill, meats for the smoker, and plenty of sausages ready to cook.

A little spotlight on Patrick Shannon , one of our Salumi & Cheese Specialists.

Patrick’s been with us since the beginning, and whenever he’s back from school, he jumps right back in helping wherever he’s needed. From building charcuterie boards to talking salumi, cheese, pairings, and products with customers, he’s become a big part of what we do here.

He’s heading back to school, so we wanted to give him a proper sendoff and show off a little of his work before he goes.

Thanks for everything, Patrick. We’ll see you on the next break.

Linz Heritage Angus Prime ribeye aged with koji, P. candidum and P. roqueforti, developing what we call the Volo Bloom.

The profile is buttery, nutty, slightly sweet and deeply beefy, with less of the heavy funk traditionally associated with dry aging.
