Creamy Cucumber Salad
Simple, refreshing and a great example of nutrients working together!
Dill contains limonene, a flavonoid that supports digestion and may help ease heartburn symptoms.
Cucumbers are high in water, making them naturally hydrating! They also provide great micronutrients such as vitamin K, vitamin C, magnesium, and potassium.
The fat in sour cream helps your body absorb fat-soluble vitamins like A, D, E, and K, making the nutrients in this dish work together and be more usable in your body!
Here is the recipe:
Ingredients:
1 English cucumber, thinly sliced
1 cup Kemps Sour Cream
1 teaspoon apple cider vinegar (ACV)
2 tablespoons fresh dill, chopped (plus extra for garnish)
Pinch of salt
Pinch of black pepper
Thinly slice the cucumber and place it in a bowl. Sprinkle lightly with salt and let it sit for 5-10 minutes. This helps draw out excess moisture.
After resting, gently squeeze the cucumber slices (by hand or using a clean towel) to remove excess water.
In a small bowl, add the drained cucumber slices, sour cream, apple cider vinegar, chopped dill, and a pinch of salt and pepper. Stir until well combined and evenly coated.
Transfer to a serving dish, sprinkle with extra fresh dill, and enjoy immediately or chill briefly before serving!
