Time to make Taiwanese Braised Pork Belly!! You need a good sharp knife to cut thin slices of skin on pork belly. (We have pork belly cut in strips in our meat freezer, ask staff for help if you can’t locate them) Use more oil to stir fried big portion of slices shallot to very golden brown, then add garlic, shredded ginger, bay leaves, cinnamon stick, star anise, stir till garlic and ginger are golden, then add slice pork belly. Let the pork belly sizzle on the pan for a minute before stirring. Then add regular soy sauce, dark soy sauce, oyster sauce, palm sugar (or cane sugar) 5 spices powder, whole white/black pepper, ground pepper, Chinese Shao Hsing cooking wine or mirin, stir it for a minute before adding 2-3 cups boiling water, (or add more water if cook a big portion) once bring to boil, use medium low heat for 20-30mins.
