Skate is delicious and quick to prepare and the perfect excuse for a butter sauce! Dust with cornmeal salt and pepper. Cook in a hot pan with plenty of butter until golden brown on each side. Serve with a squeeze of lemon and a sprinkling of capers. Fresh skate is frequently available at Southern Maryland Seafood Company at Eastern Market.

Confusion about its characteristics and a short shelf life may limit its widespread use.
