Friday special this week: handmade cavatelli! Made with a simple semolina dough (no eggs! no dairy!) We’ll have a decadent sauce to go with these made with beautiful datterini tomatoes from our friends at Campo Rosso Farm. Finish with a few dollops of fresh ricotta!

I’m officially renaming our business Via Eggplant for the month of August. We’re frying beautiful Annina eggplant from Taproot Farm almost every day. Trays and trays and trays of eggplant parm for the shop and all our markets. Plus dozens of fried eggplant sandwiches with Steve’s hand-stretched mozz, pesto (nut-free!), roasted peps and arugula.

We’ll ride this eggplant train as long as the farm is picking and as long as y’all are psyched to keep eating eggplant. Thank you for your eggplant enthusiasm! We love frying up these beauties for you.

This Friday (and the first Friday of every month) is fresh fish Friday at Via Ravioli. There's a batch of fresh lobster ravioli and Steve makes his famous octopus salad and we bring in fresh fish (for you to cook at home).

There will be plenty of lobster ravioli but for everything else we recommend pre-ordering to make sure you can get what you want. We will have extras of some fish available in the case on Friday.

My favorite summer palette of yellow & gold: Steve’s summer lasagna made with MX Morningstar sungold cherry tomatoes and Samascott Orchards sweet corn. Sweet corn gets sautéed with a bit of onion, oregano and chili flake and half puréed for a slightly chunky corn sauce. Sungolds are stewed with fresh basil and garlic and layered with our creamy bechamel. LITERALLY THIS IS SUMMER SUNSHINE IN A TRAY. Grab one at our shop in Coxsackie or any of our weekend markets:

Dropped off a big bag of sandwiches Coxsackie Hose 3 Fire Company this afternoon. A huge thank you to the DPW, fire department and all the volunteers tackling the flooding in Coxsackie today.

Is there anything more beautiful than a tray of fried eggplant? It’s been so hard to wait for our favorite Annina eggplant (a gorgeous stripy variety) to be back in season. We got our first case from Taproot Farm last week (thank you Baldor Specialty Foods!) and got right to work, slicing and dredging and frying.

We’ve tried other varieties, but nothing beats the creamy flesh of the Annina. And the proof is when one customer said to me “I always thought I hated eggplant and then I had your eggplant parm.” 💜💜💜💜

Fried eggplant sandwiches and eggplant parm will be in the case pretty much every day from now until Taproot Farm and MX Morningstar pick the last eggplants in September. She's back! Fried eggplant sandwich made with beautiful stripy eggplants from Taproot Farm down in PA. We only use this variety of eggplant (and only from two farms we love) because it makes for incredibly creamy fried eggplant. Layered onto sesame semolina bread with pesto (nut-free), fresh mozzarella, roasted peppers and arugula. Available in the case today and until the end of eggplant season!

Fresh basil mozzarella ravioli in the shop today. Made with beautiful Italian basil grown by the phenomenal crew over MX Morningstar. We swing by the farm within hours of the basil being picked so that we can get it from the field and into our fresh pasta dough in under 24 hours. That keeps the color and flavor as fresh as possible.

Some people might say that you can’t call yourself a real Italian shop until you have a giant fig tree out front. And to those people I say, “Eccolo!” A big thank you to our friends Frank & Giuseppina (with a helping hand from their sons) who gifted us this beautiful fig tree. Maybe next year we’ll have some cuttings to pass along!
