Across the Creek Farm We raise chickens commercially on pasture for meat and eggs. Across the Creek Farm is the Spencer family farm located in Northwest Arkansas.

We focus on raising free range poultry on pasture. We're steadily transforming a rocky, highly eroded Boston Mtn holler into a place where life echos and good food is grown for good families like ours and yours.

The farm email this week to our customers was about obligate creek/river rock flippers. You either are or you’re not. Two cool critters in this pic. A juvenile salamander (still has gills around the neck) & a flathead mayfly larva (family Heptageniidae, not sure the genus). The mayfly is a cool little dude whose flat body allows him to operate in fast flowing water as he munches on the algae & other goodies on the rocks. There’s also some right handed snails (that’s another post) grazing in the picture too, which is always a good sign for river health. Ozark creeks & rivers are the coolest y’all & we love them here on the farm!

Pork steaks in homemade sauerkraut straight outta the oven. Our pork steaks come from the front leg of the hog & are a tougher cut. Searing them with onions then slowly braising them in the acidity naturally found in homemade fermented kraut tenderizes them. Paired up with mashed potatoes or spaetzle & we’re eatin’ good in the holler ya’ll

❄️ Snowy ladies ❄️ Snow is a challenge for us, mostly getting to the other farm where the laying flock is. Lots of hay keeps the hens’ feet dry, gives something to scratch in, and protects the ground from compaction. The reward is happy hens & delicious eggs. All weather farmin’ y’all

Burning invasive pears on a beautifully starry night. All those Bradford pears that were the rage in landscaping a couple decades ago are actually a species of pear called a Callery. Unlike eating pears, Callery pears produce scraggly fruit that’s a nuisance to people but consumed by birds. The birds then deposit seeds & the Callery pear that emerges in a field is a thorny quick growing invasive that chokes out fields & native flora. The best tool we have in fighting them is a backhoe before they get too large. After that it’s a chainsaw & thorns poking through leather gloves, hydraulic hoses, & tires. Either way, when they’re gone we’ve got more hayground & family bonfires to follow - which makes the work & the pokes worthwhile

Hens love greens. Back before man-made vitamins were invented in the 30s to add to feed, poultry farmers grew fields of kale to make sure their birds got the nutrition they needed. Instead of growing greens, we just bring the chickens to them with daily moves. Even in winter, plants grow, especially chickweed, which is a succulent winter time favorite. It’s like the ladies have thier own salad bar - just with no ranch dressing
