Hookline Fish Company

Hookline Fish Company Hookline was a Hudson Valley smokehouse specializing in Northwest-style smoked salmon. The company closed at the end of 2018. One taste, and you'll be hooked.

Hookline owner Skip Card grew up in Tacoma, Washington. When he moved to New York, he found New Yorkers thought "smoked salmon" meant cold-smoked lox. So he bought some backyard smoking equipment and began making smoked salmon using the "hot-smoke" method preferred in the Pacific Northwest. Friends loved it and encouraged Skip to go into business. Hookline Fish Company is the result. Since opening in late 2013, Hookline has been specializing in hot-smoked salmon made using Northwest alder wood.

I haven't smoked any salmon since I closed up shop at Hookline Fish Company years ago. But today I've gone back to my roots, using the old (somewhat inappropriately named) Big Chief electric smoker to smoke a fresh batch.

Just a reminder: Hookline Fish Co. is CLOSED PERMANENTLY, and has been since January 2019. For some reason, I've lately been getting a number of phone calls and FB site visits. Perhaps an online site promoted the store without realizing Hookline quit smoking.

Since the closure of Hookline Fish Co., folks often ask, "Where can I buy smoked salmon that tastes like what you used to make?" Best suggestion: Trader Joe's. TJ's carries hot-smoked Atlantic salmon that is rather close to my recipe and smoking methods. Happy holidays!

Hookline Fish Co. is still closed, and all my commercial smokers are sold. But on vacation in South Carolina I worked with family to rig up a quickie fix: Wood pellets in fry pan atop hot plate inside cardboard box. Dowel pegs held 3 wire racks full of fresh-caught Spanish mackerel fillets. Results were tasty, and the system performed well -- until it rained and the box got a bit wet.

A smoked salmon biz that has closed doesn't really need a working website, any more than it needs a functioning page. But Hookline Fish Company still has both! Check out Hookline's slimmed-down website, complete with silly text filling the unneeded spaces on the site's template that I couldn't delete.

Last call for smoked salmon! I've got the final batch of raw salmon in the Hookline smokers. When it's done, we're calling it quits. Five years of hard work and long hours have led to wonderful customers and amazing smoked salmon, but (alas) no profits. Stop by today (Sunday, Dec. 30) and get your final fix.

Hookline is taking a Christmas vacation. The shop will reopen Saturday, Dec. 29. (This wasn't planned. We just sold a TON of smoked salmon over the weekend, and I won't smoke more until Friday. So no sense having folks stop by and be told "We're sold out.")
