July's cheese of the month picks are coming directly from our Cheese Specialists!

Our very own Rob, White Bear Lake Specialty Cheese Manager: Ski Queen Gjetost

Gjetost (also known as brunost, or “brown cheese”) is a Norwegian goat & cow’s milk cheese made by heating whey with milk & cream until it caramelizes. The result is a distinctive brown cheese with a sweet caramel flavor & a bit of goat’s milk tang. My love for Gjetost is in part nostalgic. I grew up enjoying this rare treat for breakfast with my grandpa, who emigrated from Norway, back when it wasn’t readily available in the U.S. Just slice it thinly & serve over toasted rye or marble rye bread. The fudgy cheese will soften on the warm toast. And don’t forget the coffee – Gjetost pairs great with coffee!
