Southern Purple Hull Pea Dip with Fresh Tomatoes
Makes: about 2½–3 cups
Serves: 6–8
Ingredients
• 2 cups cooked fresh purple hull peas
• ½ cup sweet onion, finely diced
• 1–2 jalapeños, finely diced
• 2 cloves fresh garlic, minced
• ½ cup fresh tomatoes, diced
• 3 tbsp olive oil or butter
• ½ tsp smoked paprika
• ½ tsp garlic powder
• ¼ tsp black pepper
• ½ tsp salt, plus more to taste
• 2 tbsp local honey
• 1 tbsp apple cider vinegar
• 2–4 tbsp vegetable or chicken broth, as needed
• 2 tbsp fresh parsley or green onion, chopped
Directions
1️⃣ Heat olive oil or butter in a skillet over medium heat. Add onion and jalapeño and cook for 4–5 minutes, until softened. Add garlic and cook for another 30 seconds.
2️⃣ Stir in the cooked purple hull peas, smoked paprika, garlic powder, salt and pepper. Cook for 2–3 minutes.
3️⃣ Transfer about ⅔ of the pea mixture to a food processor. Add honey and apple cider vinegar. Pulse several times, adding broth 1 tablespoon at a time until you have a thick, scoopable consistency. Don’t blend completely smooth—you want some texture!
4️⃣ Stir the blended mixture back into the skillet with the remaining peas and vegetables. Gently fold in the diced tomatoes and fresh parsley or green onion.
5️⃣ Taste and adjust the salt, pepper, honey or jalapeño to your liking.
6️⃣ Serve warm with toasted slices of fresh sourdough from one of our market vendors.
