Delaware Provision Company was only several years old when it was bought by Sam and Kathleen Lavery in 1971. They provided wholesale meats, provisions, and other staples to delis, grocery chains, and restaurants. sausage business, where they had specialized in various sausage products, but mainly polish sausage known as kielbasa. In the mid 1990s Sam and Kathleen decided to take the business in a
new direction, which was cooking foods for parties to the public. Sam and Kathleen's nephew William (Billy) Hayes Jr., who grew up working at Delaware Provision Company, acquired the family business in 2000, continuing the original recipes, but also food truck and catering business, cooking and preparing foods for both personal and business functions, as well as the sausage business. Custom sausage products are also made for hunters during the hunting season, mainly with venison, but any wild game is welcome. With Billy Hayes, Delaware Provision will last for the next generation to enjoy these homemade sausage products and the catering business.
