Toffee Chocolate Bundt Cake 🍫🍬🎂

Rich, chocolatey, and loaded with sweet toffee — this Toffee Chocolate Bundt Cake is pure indulgence! Moist chocolate cake studded with toffee bits and topped with a luscious glaze makes every bite irresistible.

You’ll need:

All-purpose flour, cocoa powder, sugar, baking powder, baking soda, salt, eggs, butter, milk, vanilla extract, and toffee bits. Optional: chocolate glaze or powdered sugar for topping.

To make it:

Preheat oven to 350°F (175°C) and grease a bundt pan. In a bowl, mix flour, cocoa, baking powder, baking soda, and salt. In another bowl, beat butter and sugar until fluffy, then add eggs and vanilla. Gradually mix in dry ingredients with milk until smooth. Fold in toffee bits.

Pour batter into prepared pan and bake 50–60 minutes, or until a toothpick comes out clean. Cool before removing from pan. Drizzle with chocolate glaze or dust with powdered sugar if desired.

Slow Cooker Greek-Style Herb & Lemon Lamb Delight (Low Carb)
Ingredients:

2 lbs boneless lamb shoulder, cut into chunks
2 tablespoons olive oil
4 cloves garlic, minced
1 medium onion, sliced
1 zucchini, chopped
1 red bell pepper, sliced
1 cup cherry tomatoes
1/2 cup kalamata olives
1 tablespoon tomato paste
1/2 cup chicken broth
Juice of 1 lemon
1 tablespoon dried oregano
1 teaspoon dried thyme
1 teaspoon paprika
1 teaspoon cumin
1/2 teaspoon cinnamon
1 teaspoon salt
1/2 teaspoon black pepper
1/2 cup crumbled feta cheese (optional)
Fresh parsley for garnish

Directions:

Heat olive oil in a skillet over medium-high heat. Sear the lamb chunks for 3–4 minutes per side until browned for extra flavor.
Add sliced onion and garlic to the slow cooker, then place the browned lamb on top.
Add zucchini, bell pepper, cherry tomatoes, and kalamata olives around the lamb.
In a small bowl, whisk together tomato paste, chicken broth, lemon juice, oregano, thyme, paprika, cumin, cinnamon, salt, and black pepper.
Pour the seasoned broth mixture over the lamb and vegetables.
Cover and cook on LOW for 7–8 hours or HIGH for 4–5 hours, until the lamb becomes tender and easily falls apart.
Taste and adjust seasoning if needed.
Garnish with fresh parsley and crumbled feta cheese before serving. Enjoy on its own or with cauliflower rice for a low-carb meal.

Ingredients:
2 medium eggplants, sliced into 1/2-inch rounds
1 teaspoon salt
1 cup all-purpose flour
2 large eggs
1/4 cup milk
1 1/2 cups breadcrumbs
1/2 teaspoon black pepper
1/2 teaspoon garlic powder
1/2 teaspoon paprika
1/2 cup grated Parmesan cheese
Vegetable oil for frying

Instructions:
Slice the eggplants into 1/2-inch rounds and sprinkle both sides lightly with salt. Let them sit for 20 minutes to draw out excess moisture, then pat dry with paper towels.

Place the flour in one shallow bowl. In another bowl, whisk together the eggs and milk. In a third bowl, combine the breadcrumbs, black pepper, garlic powder, paprika, and grated Parmesan cheese.

Dip each eggplant slice first in the flour, then in the egg mixture, and finally coat thoroughly in the breadcrumb mixture, pressing gently so the coating sticks well.

Heat about 1/2 inch of vegetable oil in a large skillet over medium heat.

Fry the eggplant slices in batches for 3 to 4 minutes per side until golden brown and crispy.

Remove and drain on paper towels. Serve warm as a crispy appetizer or side dish.

Biscuits and Gravy with Sunny Eggs 🍳🤤

Ingredients

* 2 large biscuits

* 2 eggs

* 1/2 lb breakfast sausage

* 2 tablespoons butter

* 2 tablespoons flour

* 2 cups milk

* Salt and black pepper to taste

* Optional: parsley or red pepper flakes for garnish

Instructions

1. Cook the breakfast sausage in a skillet over medium heat until browned.

2. Add butter, then stir in flour and cook for 1 minute.

3. Slowly pour in milk while stirring constantly until the gravy thickens.

4. Season with salt and black pepper.

5. Bake or warm the biscuits according to package directions.

6. Fry the eggs sunny-side up until whites are set and yolks stay runny.

7. Place biscuits on a plate, cover generously with sausage gravy, and serve with eggs on the side.

8. Sprinkle extra pepper on top and enjoy hot! 🔥
