🥗 Recipe Time: Heirloom Summer Salad 🥗
Add a dose of health to your plate with this nutrient-packed summer salad! Made with Heirloom Foods’ freshest organic greens, it’s a simple way to eat clean and nourish your body.
Summer Salad Recipe 🌞🥗
Ingredients:
1 cup Heirloom Foods cherry tomatoes, halved
1 cup Heirloom Foods cucumber, thinly sliced
1 Red Pepper
1/2 cup Heirloom Foods red onion, finely sliced
1 cup Heirloom Foods mixed greens (arugula, spinach, or lettuce)
1/2 cup Heirloom Foods sweet corn, fresh or grilled
1/4 cup feta cheese, crumbled (optional)
1/4 cup fresh basil leaves
1 avocado, sliced
For the Dressing:
3 tbsp olive oil
1 tbsp lemon juice (freshly squeezed)
1 tbsp balsamic vinegar
1 tsp Dijon mustard
1 tsp honey (optional)
Salt and pepper to taste
Instructions:
Prepare the Dressing: In a small bowl, whisk together olive oil, lemon juice, balsamic vinegar, Dijon mustard, honey, salt, and pepper. Set aside.
Assemble the Salad:
In a large salad bowl, combine the cherry tomatoes, cucumber, red onion, mixed greens, sweet corn, and basil leaves.
Gently toss the ingredients to mix.
Add the Avocado and Feta: Carefully layer the avocado slices on top of the salad and sprinkle with crumbled feta cheese if using.
Dress and Serve: Drizzle the dressing over the salad just before serving and toss lightly to coat.
Optional Garnish: Add a sprinkle of sunflower seeds or chopped nuts for extra crunch.
