Milk Tart With a Tiny Glow-Up
Ingredients:
Pastry
β’ 125 g butter (room temp)
β’ 120 g caster sugar
β’ 1 egg
β’ 250 g all-purpose flour
β’ 5 g baking powder (1 tsp)
β’ Lentils/beans for blind baking
Custard Filling
β’ 500 ml full-cream milk
β’ 125 ml cream
β’ 1 cinnamon stick
β’ 1 egg
β’ 100 g natural brown sugar
β’ 16 g flour
β’ 16 g cornstarch
β’ 5 ml vanilla essence
β’ Pinch of salt
β’ 20β25 g butter
β’ Ground cinnamon
Method
1. Pastry
β Cream butter + sugar. Add egg.
β Mix in flour + baking powder until soft dough forms.
β Knead lightly, press into tart tin, shape edges.
β Blind bake at 180Β°C for 30 minutes.
2. Custard Filling
β Heat milk, cream + cinnamon stick to a gentle simmer.
β Whisk brown sugar, flour, cornstarch, vanilla, egg + salt.
β Slowly temper with warm milk, whisking constantly.
β Cook until thick and silky; stir in butter.
β Pour into pastry shell, sprinkle cinnamon, and cool to set.
