🍜 Easy Mushroom Ramen

A comforting one-pot meal that’s satisfying, nutritious and packed with flavour. This easy mushroom ramen is made with a fragrant umami broth and topped with noodles, sautéed mushrooms, fresh veggies, boiled eggs and sesame seeds.

Serves: 2–3
Ready in: About 45 minutes

Ingredients:
• 1 sachet Let’s Cook umami mushroom stock
• 3 cloves garlic, sliced
• 3cm k**b ginger, sliced
• 2 cups beef stock
• 2 spring onions, cut into 5–8cm pieces
• 1 red or green chilli, deseeded
• Salt and milled pepper, to taste

For serving:
• PnP noodles
• Sautéed mushrooms
• Blanched pak choi and PnP Tasty Stem broccoli
• Edamame beans
• Sliced radishes
• Fresh basil
• Boiled eggs
• Sesame seeds

Method:

1. Combine the umami mushroom stock, garlic, ginger, beef stock, spring onions and chilli in a pot over medium heat.
2. Simmer for 15–20 minutes until fragrant.
3. Strain the broth and discard the vegetables.
4. Season the broth to taste, then divide between 2–3 bowls.
5. Top with noodles, sautéed mushrooms, blanched veggies, edamame beans, radishes, basil and boiled eggs.
6. Sprinkle with sesame seeds just before serving.

🍛 Chicken-biryani

A one-pot wonder.

Cold Sunday comfort in one pot. There’s nothing better than a warm, fragrant meal to bring the family together on a chilly day.

This Chicken-biryani is hearty, flavourful and perfect for a cosy Sunday lunch or dinner — tender chicken, fluffy rice, comforting spices, crispy onions and fresh coriander all coming together beautifully.

A one-pot wonder.

Serves 4 Less than 1 hour

Ingredients List

- 1 packet PnP 5-piece chicken braai pack
- 3 Tbsp (45ml) vegetable oil
- 1 clove garlic, crushed
- 2 onions, sliced
- 2 Tbsp (30ml) curry powder
- 2 Tbsp (10ml) cumin seeds
- 1½ cups (375ml) white or brown rice
- 3 cups (750ml) chicken stock
- Salt and milled pepper
- 2 Tbsp (30ml) fresh coriander, chopped, plus extra for serving
- ½ cup (125ml) frozen peas, defrosted
- 2 soft-boiled eggs

Method:
- Sear chicken in a large frying pan with 1 Tbsp (15ml) oil until golden brown.
- Add garlic and ½ the onion slices and sauté until soft.
- Add curry powder and cumin seeds and fry until fragrant.
-Stir in rice and sauté for 5 minutes, ensuring rice is completely coated in spices and oil.
- Add stock and cover.
- Simmer until all the liquid is absorbed and rice is cooked, about 20 minutes. Season.
- Stir through coriander and peas.
- Fry the rest of the onion in the remaining oil at medium to low heat until golden brown and crispy
- Drain on kitchen paper.
- Serve biryani topped with crispy onion, eggs and extra coriander.

🍫🍦 Peppermint Crisp Ice-Cream Sandwiches

South Africa’s favourite dessert just got a cool new makeover! These Peppermint Crisp Ice-Cream Sandwiches are creamy, crunchy and perfect for sharing — a sweet treat everyone will love.

Serves: 6–8
Freezing time: More than 1 hour

Ingredients:
• 1 tub PnP dairy ice cream: vanilla flavoured with caramel and peanuts
• 1 packet PnP coconut tea biscuits
• 4 Nestlé Peppermint Crisp chocolates, crushed

Method:

1. Line a 20cm x 30cm baking dish with baking paper.
2. Soften the ice cream slightly until spreadable.
3. Spoon the ice cream into the prepared dish and smooth it out evenly using the back of a spoon.
4. Freeze for 3–4 hours or overnight.
5. Remove the ice cream from the freezer and arrange biscuits on top.
6. Cut into squares using the biscuits as a guide, working quickly so the ice cream does not melt.
7. Sandwich each ice-cream square with another biscuit.
8. Roll the sides in the crushed Peppermint Crisp chocolate, coating all the ice cream.
9. Return to the freezer until ready to serve.

🧀🍲 Butternut Soup with Grilled Cheese Toasties

Creamy butternut soup and golden, cheesy toasties — the ultimate winter comfort combo. Thick-cut sourdough sandwiches filled with cheddar and caramelised onion relish make this hearty meal extra satisfying.

Serves: 4
Ready in: About 30 minutes

Ingredients:
• 1 packet PnP creamy butternut soup
• 1 block PnP full fat cheddar cheese
• 1 loaf sourdough bread
• ½ jar PnP caramelised onion relish
• Butter, for spreading

Method:

1. Empty the soup into a pot and gently heat on the stove. You can also heat it in the microwave, stirring every minute.
2. Grate the cheese and cut the sourdough into 12 slices.
3. Spread the caramelised onion relish onto each bread slice, then add grated cheese.
4. Sandwich with the remaining slices and spread butter on the outsides.
5. Toast the sandwiches in a pan over medium heat until the bread is golden and crisp and the cheese has melted. Halve each sandwich.
6. Ladle the warm soup into 4 bowls and serve with the grilled cheese toasties.
