Lamb shanks are perfect for slow cooking, creating rich flavour and tender meat that falls off the bone.

Ingredients:
โœ… Lamb shanks
โœ… 1 onion, chopped
โœ… 2 carrots, chopped
โœ… 2 cloves garlic
โœ… 2 tbsp tomato paste
โœ… 1 cup stock
โœ… ยฝ cup red wine (optional)
โœ… Rosemary and thyme
โœ… Salt and black pepper

Method:

โœ… Brown the lamb shanks well in a heavy pot, then remove and cook onion, garlic and carrots until soft.

โœ… Add tomato paste, wine, stock and herbs, return the shanks and simmer slowly for 2โ€“2ยฝ hours until tender.

โœ… Cover and simmer slowly for 2 to 2ยฝ hours until the meat is tender.

โœ… Serve with mash or crusty bread.
